CAPRESE BASKETS

Ingredients:

4 slices of tramezzino bread
200g cherry tomatoes
200g mozzarella cheese
dried oregano to taste
salt to taste
extra virgin olive oil to taste
basil to taste

How to make caprese baskets:

Take the bread and divide it into 8 more or less exact squares.
Grease an 8-cup muffin tin, line it with the bread and then mould it well.
It should take the shape of the mould.
Bake for 5 minutes at 200° then take out of the oven and leave to cool completely. Remove the baskets from the mould once they are cold, so they will have taken their shape.
Wash the cherry tomatoes well and cut them into cubes; place them in a bowl and add salt, oil and oregano; mix well.
Cut the mozzarella into small cubes and distribute it evenly inside the baskets.
Add the seasoned tomatoes, top with basil or chopped parsley and serve.

RICOTTA CAKE WITH CHOCOLATE CHIPS

Qty 6 people - preparation time 20 minutes - cooking time 60 minutes - difficulty easy

Ingredients:

750g fresh ricotta
225g sugar
3 eggs
80g chocolate chips
vanilla extract to taste
70g flour

How to make the cake:

First put the ricotta cheese in a bowl and reduce it to a cream with the electric whisk.
Slowly add all the ingredients: sugar, eggs, flour, chocolate chips and vanilla extract while continuing to mix with the beater. When all the ingredients are well mixed, cover your cake tin (22cm diameter) with moistened and squeezed baking paper and transfer the super creamy mixture inside. Preheat the oven to 180° (static) and bake in a preheated oven for 60/65 minutes. The cake will not become particularly dark on the surface, but you will know it is cooked because a nice golden crust will form on the surface. It has a unique creaminess and deliciousness!

FRIED MOZZARELLINAS

Ingredients:

mozzarella cherries flour to taste.
1 egg
Salt
Breadcrumbs
Seed oil

How to make mozzarellinas:

Drain the mozzarellinas well for 40 minutes to an hour. Once dry, roll them in flour, beaten egg with a pinch of salt, in breadcrumbs, again in egg, again in breadcrumbs. Fry in hot seed oil for a few minutes.
